In the summer of 2023, young mezcalero Distiller Luis Enrique Juárez of San Augustin Amatengo, Oaxaca, decided to experiment by distilling Espadin with mango. To make this batch, he roasted dozens of Espadin piñas in a conical earthen oven with guamuche and mesquite firewood for three days, crushed the cooked agaves with a bull-drawn tahona, fermented the crush agave in sabino cypress tanks for nine days with spring water, and distilled the mash once in his refrescadera still. He then chopped up mango and allowed it to macerate in the distillate for a week before redistilling it with additional fresh mango. 125 liters were produced and bottled at 47.4% abv in November 2023 for export to the US, available only in New York.
